Head Chef Adam’s cookies are a celebration of tradition, sweetness and seasonal flavours with each delicious bite. Get ready to embrace the magic of baking and enjoy the simple pleasure of homemade goodness.

 

Makes 12

 

Ingredients:

  • 1 ½ cups almond meal
  • ½ cup buckwheat flour
  • ¼  tsp salt
  • ¼ tsp ground nutmeg
  • ¼ ground ginger
  • 1tsp baking powder
  • ½ baking soda
  • ½ cup coconut oil
  • ¼ cup maple syrup
  • Zest of one lemon
  • 150 grams mixed dried fruits (dates, currants, cranberries, apricots)
  • ½ tsp organic vanilla paste

 

Method:

  • Preheat oven to 170C.
  • Soak dried fruits in cold water for 20minutes, drain and set aside.
  • Mix all dry ingredients in a bowl.
  • Add maple, coconut oil, vanilla paste and lemon zest to dry ingredients and mix.
  • Add fruit and mix to make a dough.
  • Make 12 small cookie balls.
  • Place on a baking tray and gently press down.
  • Bake at 170C for approx. 20 minutes until golden.
