This healthy caramel slice tastes heavenly. It’s gluten free, dairy free and refined sugar free.

Annette Robinson (The Omsai Ayurveda) prepared this at a recent staff event and it was a real treat. Having healthy snacks on hand can be a great way to increase nutrient intake, prevent energy dips, maintain energy levels and avoid unhealthy choices. 

Make a healthy slice and store it in the fridge for when you have a sweet craving.

 

Salted Date Caramel & Tahini Chocolate Slice

Ingredients:

Base

2 cups fine Besan flour

½ cup Almond meal

½ cup maple syrup

½ cup melted coconut oil

*good pinch of salt

 

Caramel

3 cups of dates soaked

3 tbsp brown rice syrup

1 tsp of sea salt

½ cup coconut oil

½ cup coconut cream

1 tsp vanilla paste

 

Tahini Chocolate

¾ cup melted coconut oil

¾ cup melted coconut cream

½ cup of cacao powder

½ cup maple syrup(more to taste)

½ cup hulled tahini

tsp of cinnamon

good pinch of salt

 

Method:

Base

-mix besan flour and Almond meal and salt together

-add maple and coconut oil and mix into a nice dough consistency

-I use a 21×34 cm tin and line with baking paper

-flatten the mix evenly out onto the base and prick a few times with fork and bake on 160 degrees for around 10 to 15 mins till lightly golden

 

Caramel

-add drained dates and all other caramel ingredients to food processor and process till you have a nice sticky caramel consistency with no date chunks left

-add this to the cooled base and spread evenly

 

Tahini Chocolate

-Add all ingredients to a saucepan or mixing bowl and wisk together till a nice silky chocolate texture is formed. Add more maple if its still a little on the bitter side then poor over the caramel and pop in the fridge for a few hours to set. I like to garnish with some crushed pistachios, a sprinkle of sea salt and rose petals.

Makes roughly 15 squares
