Our Head Chef Adam and Cook Oriana have created the most delicious carrot cake and we have the recipe for you. Carrots are not only delicious, but also offer a number of health benefits and that is why we love to bake with them. Some of the key health benefits of carrots include:

Ori & Adam’s Carrot Cake with Passionfruit Icing

 
Ingredients
3 cups Almond Flour
1/2 cup Buckwheat Flour
1/4 cup Brown Rice Flour
3 teaspoons Baking Powder
1 teaspoon Bi-carbonate Soda
4 cups Grated Carrot
11/2 cups chopped walnuts
1 cup Coconut sugar
1/2 cup light vegetable oil
1/2 cup agave syrup
4 eggs (egg replacer)
3 teaspoons Vanilla Extract
2 teaspoons cinnamon powder
1 teaspoon ginger powder
1 teaspoon nutmeg powder
1/4 teaspoon ground Clove
 
Icing
4 fresh Passionfruit
4 tablespoons coconut oil
1 cup raw cashews
1/2 cup fresh lemon juice
1 teaspoon vanilla extract
 
Method
Mix all cake ingredients (if batter is too thick add a little plant based milk).
Place batter in tin cook for around 50 minutes (make sure skewer comes out clean) at 190. Cool cake completely before adding icing.
 
Icing
Place all ingredients in blender and mix until smooth.
