Billabong Retreat Head Chef Adam shares his delicious Poached Pear recipe. Adam’s poached pears are gluten, dairy and refined sugar free.
- 3 corella pears
- 100ml agave
- 500ml water
- 1 cinnamon stick
- 1 star anise
- 4 cloves
- 1/4 tsp fresh nutmeg
- 6 cardamon pods
- Peel of 1 orange
Combine agave, water, cinnamon, star anise, cloves, nutmeg, cardamon and orange peel in a large pot.
Add the pears and bring to the boil.
Reduce heat and simmer for a further 15 minutes, or until the pears are tender.
Remove the pears from the pot and allow to cool.
Meanwhile reduce the liquid by two thirds. Strain the spices from the reduced liquid and discard the spices.
Cut the pears in half and remove the core.
Place the pears in a serving bowl. Pour the warm liquid over the pears. Serve with vanilla coconut yogurt.
