Vegan. gluten free
This is a pretty easygoing recipe, I’ve made quite a few different versions of it. Usually all depending on what’s in my cupboard that I can throw all together at once. Its great for snacks and totally yum for breakfast, dessert, whenever..!
Ingredients
1 ½ cup x medjool dates (preferably soaked in water for about half an hour beforehand)
1 cup x activated buckwheat
2 tbsp x chia seeds
1 tbsp x maca powder
1/3 cup x raw cacao powder
1 tbsp x maple syrup
½ cup x pepitas
½ cup x goji berries
½ cup x desiccated coconut
1 tsp x pure vanilla extract
pinch x sea salt
Method:
1. Add the dates and maple syrup into your food processor and pulse until smooth.
2. Add all of the ingredients into a bowl and mix until they are all combined and sticking together.
3. Press the dense mixture into a lined baking tray and sprinkle the desiccated coconut over the top. Leave it in the freezer for a couple of hours to set (this slice is best left in the freezer anyway)
4. Then serve and enjoy!
