Serves 4-5

  • 125 gram cup brown rice
  • 75gram black rice
  • 1 x lg cottage cheese
  • 1/8 small block cheddar
  • 1-2 pkts chopped spinach,
  • Seasoning
  • 2 sheets filo
  • Black sesame seeds
  • Veg stock
  • 1 onions
  • 1 cloves garlic
  • Basil 1 teaspoons
  • Dill 1 teaspoons
  • Nutmeg 1 teaspoons
  • Tamari sauce

Preheat oven to 180

Cook brown rice and black rice day before in veg stock

Fry onions and garlic in ghee or olive oil,  add spinach and cook for a few minutes adding a little more butter and a dash of tamari,

Add rice mix with cottage cheese and spinach, season and add spices,  grate cheddar over the top, brush filo with melted butter  and put over mixture and bake in large baking dishes for half an hour to 45mins until filo is crispy, sprinkle with black sesame on final layer before oven

Served with steamed greens and or green salad and red capsicum sambal.
