Denise’s Spicy Mexican Black Beans

Ingredients 

  • 250g black beans
  • 2 bay leaves 
  • 1 medium sized onion
  • 4 cloves garlic
  • 2 tbsp cumin
  • 3 tbsp tomato paste
  • 2 freshly diced tomatoes
  • 1 tbsp paprika
  • Handful chopped coriander

Method 

  1. Soak beans for 24 hours.
  2. Drain beans and boil in fresh water with bay leaves until tender.
  3. In a separate pan sauté the onions and garlic until translucent.
  4. Stir in cumin, tomato paste and add diced tomatoes to the onion and garlic.
  5. Add 4 ladles of liquid from the beans to the tomatoes.
  6. Drain some liquid from the beans and leave half submerged.
  7. Add the tomato sauce to the beans and let simmer for 10 minutes.
  8. Add salt and pepper to taste
  9. Garnish with coriander
  10. Serve with rice, roast sweet potatoes and guacamole.
