Raw Lemon Slice: Wholesome, Zesty & Delicious

Our Raw Lemon Slice has been a guest favourite at Billabong for years. Bright, creamy and naturally sweetened, it’s one of those treats that feels indulgent while being made entirely from nourishing wholefood ingredients.

Made with cashews, coconut and fresh lemon, this slice is rich in healthy fats, fibre and plant-based protein to help keep you feeling satisfied. Cashews are also a wonderful source of magnesium, an essential mineral that supports energy production and nervous system health, while fresh lemon provides vitamin C and a refreshing citrus flavour. It’s a beautiful reminder that wholesome ingredients can create something truly delicious.

Ingredients

Base:

  • 3 cups raw cashews
  • 3 cups desiccated coconut
  • 30 Medjool dates, roughly chopped
  • 5 tbsp lemon juice
  • ½ tsp salt

Topping:

  • 2 cups raw cashews
  • 1 cup coconut oil
  • 1 cup pure maple syrup
  • Zest of 2 lemons
  • 6 tbsp lemon juice
  • 1 tsp vanilla extract

Method

  1. Line a rectangular slice tin with baking paper.
  2. Add the base ingredients to a food processor and blend until the mixture comes together.
  3. Press the mixture firmly and evenly into the prepared tin.
  4. Add all of the topping ingredients to a high-speed blender and blend until completely smooth and creamy.
  5. Pour the topping over the base and smooth the surface with a spatula.
  6. Refrigerate for 4–6 hours, or until firm. For a quicker set, place it in the freezer for 1–2 hours.
  7. Slice into squares and store in an airtight container in the fridge for up to one week, or freeze for up to three months.
