Banana Bread

Ingredients
- 2 eggs
- ¼ cup plant-based milk
- ⅓ cup melted coconut oil
- 1 tsp vanilla extract
- 2 large ripe bananas
- 1¾ cups almond flour
- Pinch of salt
- Pinch of cinnamon
- 2 tbsp–¼ cup maple syrup (depending on sweetness preference)
- 1 tsp baking soda
- Optional: raisins or chopped nuts
Method
- Preheat the oven to 180°C.
- In a bowl, combine the eggs, plant-based milk, coconut oil, vanilla extract, mashed bananas and maple syrup.
- In a separate bowl, mix together the almond flour, salt, cinnamon and baking soda.
- Fold the dry ingredients into the wet mixture until just combined.
- Stir through raisins or chopped nuts if using.
- Grease a loaf tin with coconut oil and pour in the batter.
- Bake for approximately 55 minutes, or until a skewer inserted into the centre comes out clean.
Optional Variations
- Chocolate Swirl: Fold through 2 tablespoons of cocoa powder or swirl melted dark chocolate into the batter before baking.
- Berry Boost: Add ½ cup fresh blueberries for extra antioxidants and natural sweetness.
