Ingredients
- 1 cup dates soaked in warm water for 20 minutes
- 1 cup carrot, grated
- 2 tablespoons maple syrup
- 2 tablespoons sultanas, or raisins
- ½ cup walnuts or pecans
- 1/3 cup almond meal or coconut flour
- ¼ cup almond butter
- ¼ cup toasted desiccated coconut
- Pinch of each cinnamon, nutmeg, clove, ginger, allspice and cardamom
Instructions
- Place dates in warm water for 15–20 minutes.
- In a blender add dates, carrot, nuts, coconut flour or almond meal, and almond butter. Blend until you get a thick dough. If the mixture is too sticky add a little coconut flour or almond meal.
- Shape into even balls and roll in toasted coconut.
- Refrigerate for 1 hour.
