Nature’s kickstart – Billabong’s homemade Fire cider

Ingredients

▪ 31/2 cup of Fermented cider vinegar
▪ 1 cup of chopped ginger
▪ ¼ cup chopped turmeric
▪ 1 red onion
▪ 12 cloves garlic
▪ 1 lemon sliced
▪ 1 lime sliced
▪ 1 orange sliced
▪ 3 chillies sliced
▪ 2 tablespoons of honey
▪ 2 cinnamon sticks
▪ 4 sprigs of fresh thyme
▪ 4 sprigs of fresh rosemary
▪ 1 teaspoon peppercorn

Method

  1. Add to a two litre jar chopped ginger, turmeric, onion, garlic, lemon, lime, orange, chillies, thyme, rosemary, cinnamon sticks and peppercorns. Then add honey.
  2. Pour fermented cider into the jar, ensuring ingredients are submerged in vinegar to prevent spoiling.
  3. Place baking paper under the lid to keep vinegar from touching the metal if using a metal lid.
  4. Give the jar a good shake and store in a cool dark spot for 6 weeks. Shake the jar every day to mix ingredients.
  5. After the 6 weeks, strain ingredients. Squeeze as much liquid out of the ingredients as you can.
  6. Place in a clean jar sealed. Refrigerate for up to 8 months.
  7. Enjoy 1 tablespoon daily or use the fire tonic when cooking
