Naked Snicks Bar
Ingredients
Base
• 2 cups almond meal
• 2 tbsp peanut butter (or almond butter)
• 2 tbsp coconut oil
• 2 tbsp maple syrup
• 1 tsp vanilla extract
• Pinch of salt
Caramel
• 1 cup Medjool dates (pitted & soaked in hot water for 10 min)
• 1/4 cup almond butter
• 1/4 cup coconut oil
• 1/4 cup maple syrup
• 1/2 tsp vanilla extract
• Pinch of salt
Toppings
• 1/2 cup mixed nuts (roughly chopped)
• Optional: melted dark chocolate (highly recommended)
Method
1. Prepare tin – Line a square tin with baking paper.
2. Make the base – Mix all base ingredients in a bowl until dough-like. Press firmly into the tin to form an even layer.
3. Caramel layer – Blend soaked dates with almond butter, coconut oil, maple syrup, vanilla, and salt until smooth. Spread evenly over the base.
4. Add toppings – Sprinkle chopped nuts on top. If using, drizzle or spread melted dark chocolate over the caramel layer.
5. Set – Place in the fridge for at least 2 hours (or freezer for 1 hour) until firm.
6. Slice & enjoy – Cut into bars and store leftovers in the fridge or freezer.
