What’s really On Your Plate?

Some great expert advice from our resident Naturopath Anne Currenti.

When it comes to nutrition, most of us focus on the big players — carbohydrates and protein. They’re essential, yes. But there’s something often overlooked that plays a powerful role in how we digest and enjoy our food: flavour.
We’re all familiar with salty, sweet, and umami — in fact, many of us consume these in excess. But the real digestive heroes are the two flavours we often neglect: sour and bitter.

These sharp, tangy, and complex notes aren’t just about taste — they actually stimulate the digestive tract, helping your body release the enzymes and acids it needs to break down food effectively.

At Billabong Retreat, we intentionally incorporate ingredients like:

  • Lemon
  • Apple cider vinegar
  • Endive
  • Yoghurt
  • Kimchi
  • Sauerkraut

These bitter and sour elements awaken the palate and prime your body for nourishment. You’ve probably noticed them quietly playing a role on your plate here.

Bring It Home
How can you take this small but powerful principle into your everyday meals?

Try adding a splash of lemon to your salad, a spoonful of sauerkraut on the side of your dinner, or start your morning with a shot of diluted apple cider vinegar.

A little bitterness and sourness go a long way in building a happier, healthier gut — and a deeper connection to what you eat.
