This Creamy Red Lentil Soup by Chef Jeevi is the perfect bowl of nourishment for this season of transition. With the earthy richness of red lentils, the gentle spice of curry and turmeric and the creamy comfort of coconut cream, it brings together all the elements that support digestion, warmth and calm.
Packed with fibre, plant-based protein and seasonal vegetables, this soup is not only deeply satisfying but also incredibly easy to prepare. Serve with crusty bread or a scoop of rice and enjoy a moment of stillness with every spoonful.
Serves: 4–6
Ingredients:
• 1 cup red lentils, rinsed and drained
• 5 cups water
• 2 teaspoons salt
• 1 teaspoon turmeric powder
• 2 tablespoons olive oil
• 1 teaspoon curry powder
• 1 can coconut cream
• 1 can crushed tomatoes
• 1 medium carrot, diced
• 1 small zucchini, diced
Instructions:
1. Prepare the Base: In a large pot over medium heat, combine the rinsed red lentils, water, salt, turmeric powder, oil, curry powder, coconut cream and crushed tomatoes. Stir well to ensure all ingredients are evenly distributed.
2. Cook the Lentils: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer uncovered for 25 minutes, stirring occasionally to prevent the lentils from sticking to the bottom of the pot.
3. Add the Vegetables: After the lentils have cooked for 25 minutes, add the diced carrot to the pot. Continue to simmer for an additional 5 minutes. Next, add the diced zucchini and cook for another 5 minutes, or until both the carrot and zucchini are tender.
4. Final Adjustments: Taste the soup and adjust the seasoning as needed, adding more salt or curry powder to suit your preference. If the soup is too thick, you can add a bit more water to reach your desired consistency.
5. Serve: Ladle the soup into bowls and serve hot. Optionally, garnish with fresh coriander.
