This simple yet satisfying recipe uses a blend of almond flour and gluten free flour for a soft crumb, while applesauce and coconut oil keep it tender and moist. Naturally sweetened with options like coconut sugar and finished with a creamy almond and coconut frosting, it’s ideal for gatherings, afternoon tea or simply as a nourishing way to honour your sweet tooth.

Jeevi’s Vanilla Cake (Serves 8)

Dry Ingredients:
• 1 cup gluten-free all-purpose flour
• ½ cup almond flour
• ¾ cup organic cane sugar or coconut sugar
• 1 tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• 2 tsp xantham gum

Wet Ingredients:
• 1 cup plant-based milk (like almond, oat, or soy)
• ¼ cup melted coconut oil (or avocado oil)
• 1 tbsp apple cider vinegar or lemon juice
• 1 tbsp pure vanilla extract
• ¼ cup unsweetened applesauce (for moisture)

Instructions:
1. Preheat the oven to 180°C. Lightly grease and line one 6-inch round cake pan or a small baking dish.
2. In a large mixing bowl, whisk together all the dry ingredients.
3. In a separate bowl, mix all the wet ingredients until well combined.
4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Don’t over mix. The batter should be smooth and a little thick.
5. Spread the batter evenly in your prepared pan.
6. Bake for 45 minutes, or until a toothpick poked into the centre comes out clean.
7. Let the cake cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.

 

 

Almond & Coconut Cream Frosting

Ingredients:
• ½ cup almond flour
• ¼ cup coconut sugar
• 2 tbsp maple syrup
• ¼ tsp salt
• ¼ to ⅓ cup warm water (adjust to achieve desired consistency)

Method:
1. In a mixing bowl, combine the almond flour, coconut sugar, maple syrup and salt.
2. Gradually add warm water, starting with ¼ cup. Mix well until the frosting reaches a smooth, spreadable consistency. Add more water if needed.
3. Cover and refrigerate for 15–20 minutes to allow the frosting to firm up slightly.
4. Once chilled, spread evenly over your cake and enjoy.
