These Autumn Spiced Cacao Bliss Balls by Billabong Retreat Chef Jeevi combine the natural sweetness of dates, the warmth of vanilla and the depth of cacao, all wrapped in a smooth dark chocolate coating.

Packed with wholesome ingredients, they make an ideal afternoon pick me up or a satisfying after dinner treat. Whether enjoyed with a cup of tea or as an energy boosting snack, these bliss balls bring comfort and indulgence without compromise. Simple to make and easy to store, they’re a perfect go to for the season.

Ingredients:
For the Bliss Balls:

-2 cups almond meal
-1 cup desiccated coconut
-1 cup pitted dates, soaked in water
-¼ cup cacao powder
-1 tbsp vanilla extract
-Pinch of salt

For the Chocolate Coating:

-1 cup dark chocolate chips 

Instructions:
1. Prepare the Dates
Drain the soaked dates and blend them in a food processor until a smooth paste forms.

2. Mix the Ingredients
In a large mixing bowl, combine the blended dates, almond meal, desiccated coconut, cacao powder, vanilla extract, and a pinch of salt. Mix well until a dough-like consistency is achieved.

3. Shape the Bliss Balls
Using your hands, roll the mixture into small balls, approximately the size of a ping-pong ball. Place them on a lined tray or plate.

4. Melt the Chocolate
In a double boiler (or a heatproof bowl placed over a saucepan of simmering water), melt the chocolate chips, stirring gently until smooth.

5. Coat the Bliss Balls
Using a fork or dipping tool, carefully dip each bliss ball into the melted chocolate, ensuring an even coating. Allow any excess chocolate to drip off before placing them back onto the lined tray.

6. Set the Bliss Balls
Transfer the tray to the fridge and let the bliss balls chill until the chocolate coating is firm (approximately 30 minutes).

Storage Tips:
Store in an airtight container in the refrigerator for up to a week.
For longer shelf life, keep them in the freezer and enjoy as a quick, healthy treat anytime.
