Berry Apple Oat Crumble

GF | Plant Based | No Refined Sugar

Ingredients:

  • 12 green apples
  • 2 cups frozen berries
  • 2 cups rolled oats
  • 1 cup almond meal
  • 2 cups walnuts or pecans, roughly chopped
  • 1/4 cup lemon juice
  • 1/2 cup melted coconut oil
  • 1 cinnamon stick
  • 1 1/2 teaspoon cinnamon powder
  • 4 teaspoons vanilla paste
  • 1/3 cup agave syrup
  • 1/3 cup maple syrup
  • 2 pinches salt

 

Instructions:

1. Preheat oven to 200 F.

2. Peel green apples and cut in quarters.

3. ⁠In a large saucepan add the apples, berries, 1/2 teaspoon cinnamon powder, cinnamon stick, agave syrup, 2 teaspoons vanilla paste and lemon juice. Simmer until apples are just done. Place mixture in a 32x22cm baking dish.

4. In a bowl, combine oats, nuts, 1 teaspoon cinnamon powder, 2 teaspoons vanilla paste, almond meal, maple syrup, coconut oil and salt.

5. Distribute oat crumble over top of apple and berry mixture.

6. ⁠Bake for 25 – 35 minutes until oat crumble is golden brown.

7. ⁠Top with your favourite cream and fresh berry.
