Rustic Greek White Bean and Vegetable Soup
Ingredients
5 cups cooked white beans
4-5 cups of vegetable stock
4 tablespoons extra virgin olive oil
2 brown onions finely diced
2 carrots, cut in cubes
3 stalks celery, cut in cubes
5 cloves garlic, minced
2 cups parsley, finely chopped
1 teaspoon dried oregano
Salt and pepper
Method
1. Heat oil in large pot on medium heat add onion and sauté until soft.
2. Add garlic, carrots, celery and oregano and saute for 10 minutes.
3. Add white beans and vegetable stock gently stir.
4. Simmer for 30-40 minutes until soup thickens occasionally stirring.
5. Add parsley, salt and pepper serve with crusty bread.
