I have spent the past few years working in the city in mostly French, Italian and Mediterranean style cooking after moving from Jersey 18 years ago. What I love the most about working at Billabong retreat is letting the vegetables speak for themselves and the surrounding nature that the retreat brings! – Adam
My whole food journey began when studying to be a Naturopath more than 15 years ago. I moved from a passionate home cook to working in professional kitchens after attending culinary school while living in New York. At Billabong I have the opportunity to combine both my passion for food as medicine and love of cooking a diverse range of plant based foods. – Susan
For me , cooking is an expression of LAND, where you from and the culture of that place, my style of cuisine is inspired by various flavours…the combination of spices and aromas make it unique in its own way. – Mala
