Haz’s Coconut Dahl

  • 1 tblsp ghee
  • 2 cups Red lentils soaked over night
  • 1 garlic cloves
  • small Knob ginger grated
  • 500mls veg stock (herbamare is good)
  • ½ can Coconut cream
  • Lemon juice
  •  Fresh coriander leaves

In a heavy based pot gentle fry ginger and garlic in ghee until soft.  Add half the stock, lentils and stir and then add the rest of the stock, keep the water gently simmering for about half an hour.

When the lentils begin to soften add the coconut cream…keep stirring and simmering for about another half hour.. add a little more water if you need to.

The dahl is ready when the lentils are completely soft add a squeeze of lemon juice and fresh chopped coriander season with salt and pepper.
